Catch to Cook is a recipe series developed in conjunction with Annabel Langbein and Sanford and Sons Fishmonger.
Using recipes originally developed by Chef Paulie Hooton at the Auckland Fish Market Seafood School, Annabel has put her special spin on them to create great tasting everyday meals, using some of the lesser known species.
A new recipe will be released each month, and you will be able to buy the meal kits (or just the fish) either in-store or online (here).
By focusing on everyday meals and not overwhelming kiwi’s with what fish goes with what dish, the aim is to help Kiwi’s enjoy more types of seafood more often.
This Month’s Catch to Cook Recipe: Coconut Fish Curry
Included in this month’s Catch to Cook Box (Serves 4 People):
- 600g skinless, boneless fillets of firm white fish (depending on daily catch – trevally, monkfish, or kahawai)
- 50g green curry paste
- 1 lime
- 1 can of coconut cream
- 1L of fish stock
- 200g green beans
- 1 pack of roasted coconut chips
- 1 fresh coriander bunch
- 2 packs of pre-cooked rice
Not included in this month’s Catch to Cook Box (but needed for the recipe):
- 1 tbsp neutral oil
- 1 tbsp fish sauce
- 1 cup thawed peas
- salt, pepper
