Gemfish, also known as Tīkati or Silver Kingfish, are found around the northern and east coasts of New Zealand. They have a long slender body with smooth, silvery skin that shimmers in the light.
Their pinky white flesh is sweet in flavour, and delicate in texture meaning it flakes easily when cooked, similar to Hoki. Our Gemfish also have a high oil content, making it a forgiving fish to cook – great for novices!
