Hāpuku, also known as Hāpuka or Whapuku but commonly known as Groper in the South Island, is a wreck fish. They are deep-water marine fish found on the ocean bottom, where they inhabit caves and shipwrecks.
Hāpuku are big fish, growing up to 1.5 metres long and up to 100kg. They are found in reefy areas all around New Zealand between depths of 30 and 300 metres.
While Hāpuku can grow to a large size, it is the smaller fish that offer sweeter fillets. Their white flesh is firm and textured, and holds its shape nicely when cooked. Our Hāpuku have a wonderful big flake with a cream-like finish after cooking, which brilliantly suits frying, poaching, steaming, baking or being grilled on the barbeque.
