Kahawai is one of the most common and underrated species in our waters! Caught throughout the year around the North Island and near Kaikoura, Kahawai can be recognised by their torpedo shaped, dark green body with a white belly.
Their flesh is firm with a large, thick flake and pinky-red colour, turning to a browny-beige when cooked. Kahawai can be pan-seared or popped into curries and fish pie as it holds it shape well. Kahawai is also brilliantly suited to smoking due to their high fat content.
