There’s nothing else in the world quite like Kina. When whole, Kina are a spiky ball that’s best treated with respect – but once open they are all silky, delicate goodness.
Kina are a sea urchin. While there are 500 species around the world, this species is found only in New Zealand. It’s widespread around our coasts down to 50 metres underwater, becoming very dense in some areas.
Sourced by Sanford and Sons, this Kina is harvested from the East Coast of the North Island, where the warmer waters result in small, sweet-tasting roe. Kina is available all year round, so can be delighted in at any time.
The roe is a dusty orange with a creamy texture, and a taste that manages to be both sweet and sour, salty and bitter. It’s a taste that, once acquired, can become an addiction…
