Qui Sardegna Fregola Sarda

Fregola (or Fregula as it’s known in Italy) is a pasta from Sardinia, similar to Israeli couscous but bigger in size.

Made from water and semolina dough, the pasta is hand-formed then baked, giving it a toasty and rustic taste – perfect as a side dish for seafood, or a tasty addition to salads.

This all-purpose pasta is great with any seafood and can be used in place of couscous or orzo. Pair it with olives, capers, anchovies and pronto rosso for a delicious side dish – a great accompaniment for our Pan-Fried Sicilian Fish recipe.
