Red Gurnard, or Pūwhaiau, is the most common of the Gurnard species found in New Zealand waters.
Widespread around New Zealand, Gurnard are found on sandy shell seabeds to a depth of approximately 180 metres and are caught all year round. Nicknamed ‘Carrots’ for their bright orangey-red colour, they have large pectoral fins that open up like wings and 'feeler feet' that stir up the sea floor to release food.
Gurnard has a lovely small, sweet and succulent white flake with a low oil content. It’s a versatile fish, with medium-textured flesh that holds its shape when cooked. That allows our whole Gurnard to be cooked in practically every way – choose from frying, poaching, steaming, baking, or grilling on the barbecue.
