Chilli and Lime Squid Salad

Savour the flavours of this vibrant Chilli and Lime Squid Salad. Using tender squid rings, fresh Asian-inspired ingredients on a bed of crispy salad, it’s the perfect quick meal that will tick all the boxes.

Ingredients

MARINADE

  • 1 clove garlic, minced

  • 1/2 teaspoon ginger, finely grated

  • 1 medium red chilli, deseeded and finely chopped

  • 2 tablespoons lime juice

  • 1 teaspoon fish sauce

  • 1 teaspoon sugar

  • 340g Squid Rings, thawed

DRESSING

  • 2 tablespoons lime juice

  • 2 teaspoons sesame oil

  • 2 teaspoons fish sauce

  • 2 teaspoons sugar

SALAD

  • 1 shallot, finely sliced

  • 6 cos lettuce leaves, torn

  • ¼ cucumber, sliced

  • ¼ cup fresh mint leaves

  • ¼ cup fresh coriander leaves

  • 1 medium red chilli, sliced, optional

  • 1 tablespoon oil

TO SERVE

  • 1 lime, cut into wedges

Method

  1. In a large bowl, mix the marinade ingredients. Add the squid rings and set aside for 10 minutes.

  2. In a bowl, toss the salad ingredients together.

  3. In a small dish, mix together the dressing ingredients.

  4. Heat the oil in a frying pan over a medium heat. Add the marinated squid rings and sear for 2 minutes on each side until lightly golden.

TO SERVE

Place salad into bowls, top with seared squid rings then pour over the dressing. Add lime wedges for extra zing.

CHEF'S TIP

We’ve used Squid Rings for this recipe, but you can use any squid cut such as tentacles or tubes.
