Chilli and Lime Squid Salad
Ingredients
MARINADE
1 clove garlic, minced
1/2 teaspoon ginger, finely grated
1 medium red chilli, deseeded and finely chopped
2 tablespoons lime juice
1 teaspoon fish sauce
1 teaspoon sugar
340g Squid Rings, thawed
DRESSING
2 tablespoons lime juice
2 teaspoons sesame oil
2 teaspoons fish sauce
2 teaspoons sugar
SALAD
1 shallot, finely sliced
6 cos lettuce leaves, torn
¼ cucumber, sliced
¼ cup fresh mint leaves
¼ cup fresh coriander leaves
1 medium red chilli, sliced, optional
1 tablespoon oil
TO SERVE
1 lime, cut into wedges
Method
In a large bowl, mix the marinade ingredients. Add the squid rings and set aside for 10 minutes.
In a bowl, toss the salad ingredients together.
In a small dish, mix together the dressing ingredients.
Heat the oil in a frying pan over a medium heat. Add the marinated squid rings and sear for 2 minutes on each side until lightly golden.
TO SERVE
Place salad into bowls, top with seared squid rings then pour over the dressing. Add lime wedges for extra zing.
