Grilled Mussels with Garlic Butter and Parmesan

A deliciously easy appetiser using our juicy Greenshell™ Mussels served in the half shell, topped with garlic herb butter and bubbling parmesan, ready in just 15 minutes!

Ingredients

  • 400-500g Greenshell™ Mussels Half Shell, thawed

  • 4 tablespoons butter, melted

  • 2 tablespoons parsley, finely chopped

  • 2 cloves garlic, finely chopped

  • salt and pepper

  • ½ cup parmesan, finely grated

Method

  1. Pre-heat the grill to 200°C/492°F. Line a baking tray with baking paper, then arrange the mussels in a single layer.

  2. In a small bowl combine the melted butter, chopped parsley and garlic. Season with salt and pepper.

  3. Spoon the garlic butter onto each mussel then sprinkle with parmesan, covering evenly.

  4. Grill for 2-3 minutes until the cheese is bubbling and golden.

CHEF'S TIP

Make sure to drain the mussels thoroughly once defrosted to avoid any unwanted liquid whilst grilling.
