Steamed Mussels with Beer, Chilli and Coconut

An easy yet flavourful dish featuring juicy, plump Greenshell™ Mussels in a deliciously creamy coconut sauce with a hint of spice, it’s the perfect quick dinner.

Ingredients

  • 2 tablespoons olive oil

  • 2 cloves garlic, finely chopped

  • 1 small red onion, finely sliced

  • 900g Greenshell™ Mussels Whole Shell

  • 1 cup beer

  • ¼ cup sweet chilli sauce

  • ¾ cup coconut cream

  • salt and pepper

TO SERVE

  • ¼ cup fresh herbs – coriander, basil or parsley

  • 1 fresh lime, cut into wedges

Method

  1. Heat the olive oil in a large saucepan on medium heat, then sauté the garlic and red onion for 1-2 minutes until soft and fragrant.

  2. Add the mussels and beer to the saucepan, cover with a lid and simmer for 4-5 minutes until the mussels open. Move the mussels into a serving dish.

  3. To the broth, add the sweet chilli sauce and coconut cream and simmer for a further 1-2 minutes. Season to taste.

TO SERVE

Pour the coconut chilli broth over the mussels and top with fresh herbs, serve the lime wedges on the side.

CHEF'S TIP

We’ve used Whole Shell Mussels, but Half Shell Mussels can be substituted in and heated for the same amount of time.
