Steamed Greenshell™ Mussels in White Wine and Garlic

Plump, juicy Greenshell™ Mussels in a silky white wine, garlic and parsley broth - perfect for soaking up with a loaf of crusty bread. This simple yet special meal can be served in just 15 minutes.

Ingredients

  • 1 tablespoon olive oil

  • 2 tablespoons butter

  • 3 shallots, thinly sliced

  • 1 bay leaf

  • 4 cloves garlic, thinly sliced

  • 400-500g Greenshell™ Mussels Half Shell, thawed

  • 1 ½ cups dry white wine

  • 1 tablespoon lemon juice

  • ¼ cup chopped flat leaf parsley

  • salt and pepper

Method

  1. In a large pot, heat olive oil and 1 tablespoon of butter over a low heat. Add the shallots and bay leaf and fry until shallots have softened, then add the garlic.

  2. Add in the mussels and stir for 1 minute. Increase the heat then add the white wine and lemon juice. Cover with a lid and simmer for 5 minutes then move the mussels into a serving dish.

  3. To the remaining broth, add the butter and chopped parsley. Season with salt and pepper then pour the liquid over the mussels and serve immediately.

CHEF'S TIP

For those who love Wholeshell Mussels simply simmer them until they naturally open up; any that don't within 5 minutes should be removed.
