Our Pacific Oysters, or Tio Repe, come by the 1/2 dozen, freshly shucked in the half shell. Oysters are the ultimate luxury food, and they perfectly capture the freshness and vitality of the waters from which they were harvested.
These Pacific Oysters were wild-farmed in the tidal waters of harbours throughout Northland, the Hauraki Gulf and Marlborough Sounds, so are – happily for us – available all year around.
They are plump, deep-cupped oysters with a clean taste that is fresh and crisp, with a sweet creamy finish that’s all the better for a squeeze of lemon.
