Ingredients

  • 2 shallots

  • ¼ cup red wine vinegar

  • 2 dozen oysters

TO SERVE

  • lemon wedges

Method

  1. Finely dice shallots and place in a bowl with red wine vinegar.

  2. Place oysters on a serving dish or plate and drizzle with half the red wine dressing.

  3. Serve the rest of the dressing alongside oysters with lemon wedges.

CHEFS TIP:

Store the mignonette sauce in the fridge for up to 3 days in a covered bowl or container.
