  • 1/4 cup very finely diced shallots

  • 1/3 cup lime juice

  • 1/2 cup mandarin juice

  • 1 teaspoon of sugar

  • 1 tablespoon of chilli oil (ideally with chunky pieces in it)

  • 300g kingfish or trevally

  • 3 tablespoons of fresh dill sprigs


1. Combine the shallots, lime and mandarin juice, sugar and chilli oil together in a bowl.

2. Slice the kingfish into roughly ½ a centimetre thick pieces.

3. Place the fish onto a serving platter then spoon over roughly 120mls of the zesty sauce.

4. Garnish with the sprigs of dill and season with salt and pepper.
