Spiced Baked Prawns
250 grams firm feta cheese
16 large raw peeled prawns, tail on
6 medium vine tomatoes, quartered
zest of 1 large lemon
3 cloves garlic, crushed
2 tablespoons each lemon juice and olive oil
2 teaspoons dried oregano
1 teaspoon fennel seeds
½ teaspoon each chilli flakes & smoked paprika
¼ cup pine nuts
sea salt and freshly ground pepper
small handful chervil/parsley
crusty bread or rolls
1. Preheat the oven to 180ºC fan bake.
2. Break the feta into large pieces and place in the baking dish along with the prawns.
3. Combine all the remaining ingredients into a bowl and season well then spoon everything over the feta and prawns. Bake for about 15 minutes until the prawns are just cooked and the feta is lightly golden.
4. Scatter with herbs and serve warm with plenty of crusty bread for mopping up the juices.
